Wolraad Woltemade - 1976 From 1967 - 1975, the Suez Canal was closed as a result of the Arab-Israeli war. Oil tankers were forced to take the long route from the Gulf to Europe around the Cape of Good Hope, a much choppier route than through the Mediterranean. To assist tankers in distress, two new tugboats were commissioned, the SA John Ross (built in Durban) and the SA Wolraad Woltemade, built by the Robb Caledon shipyard in Leith. When launched, the pair held the record for the world’s most powerful tugs. Robb Caledon was formed from the merger of the Henry Robb Shipyard in Leith and the Caledon Shipbuilding & Engineering Company of Dundee in 1968. Lind selected twelve sailors on the Salisbury with scurvy, and allocated two men each to six different treatments for a period of fourteen days. He later recorded in his 1753 book ‘A Treatise of the scurvy’, that the ‘most sudden and visible good effects’ were shown by the sailors eating citrus fruits. While Lind himself missed the significance of this observation, he is recognised for pioneering the concept of a ‘fair trial’, with a preference for observation over theory that set him apart from other practitioners of his era. We heat the mixture of spirit and botanicals using 100% green electricity and over the course of 9 hours the rising vapour infused with the botanicals from the pot passes through the lime peel giving it a beautiful citrus top note. After some informal medical training at Edinburgh University, he joined the Royal Navy in 1738 as a Surgeons’ Mate, and by 1747 he had become Surgeon of a ship called HMS Salisbury. In the 18th and 19th centuries, whisky merchants gradually began to dominate the shore as Leith became Scotland’s national hub for the maturation and export of the country’s national spirit. The key raw materials for making glass were locally abundant: sand and kelp (a large sea-weed) and the first records of glass production in Leith emerge from the mid to late 17th century. It was this remarkable local industrial heritage that inspired us to choose a wine bottle shape for our gin. We’ve also embossed the words ‘Leith Glass Works’ on the base of our bottle, a name that will feature on all the spirit bottles we produce for years to come. They often made a horrible mess of the place on their way. We wanted a way to tell some of these stories with our gin, and so we’ve created a map depicting 24 ships with historic or contemporary associations with Leith. Some of them just tell us something about Leith in their era. Others have fascinating stories to tell. Perhaps start there, and then add more tonic if you’d like it a little weaker. Most of us don’t have the perfect ingredients to hand when we’re mixing a G&T at home, and we want you to enjoy our gin any way that you’d like to. But if you want a few more pointers… We like to use a tall glass or hi-ball. It helps keep the fizz in your tonic for longer and it’s easier to measure out your gin to tonic when you’re pouring. We’ve found that Fever Tree Refreshing Light Tonic works beautifully with Lind & Lime. Fill your glass with ice - as much as you can. The cocktail was said to pack such a punch that it was reminiscent of being shelled by French 75mm field gun. 50ml Lind & Lime 30ml freshly squeezed lemon 15ml sugar syrup Shake and pour into a champagne flute. Once settled, pour champagne or prosecco down a bar spoon allowing it to sit on top of the gin mix. Optional: drop a sugar cube into the glass. Indeed, that is how the recipe is originally set down in the famous Savoy Cocktail book of 1930. We were pretty excited about this as Rose’s Lime Cordial was first produced in Leith, where we make our gin. However, after much experimentation we decided that to make the ultimate Gimlet, it’s got to be fresh lime juice. Maybe it just wasn’t as easy to come by in 1930… 50ml Lind & Lime 25ml freshly squeezed lime juice Stir in sugar syrup or sugar and sweeten to your taste.
